Desi Ghee with Gujia and Besan Laddu

The Goodness of Desi Ghee Shines Bright this Holi with Gujia and Besan Laddu

As the vibrant festival of Holi approaches, Indian households across the country begin preparations for the mouthwatering delicacies that make this celebration truly special. From Gujia to Chandrakala, Besan Laddu to other sweets and namkeen delicacies, one common thread binds all these traditional Holi treats together - the heavenly taste and aroma of desi ghee.

This classic cooking medium has been revered in Indian culinary traditions for centuries, and for good reason. Desi ghee, made from the milk of indigenous desi cows, is a nutritious source of good fats, vitamins and antioxidants. Its rich yet balanced flavour enhances sweet and savoury dishes alike.

Amongst the varieties of desi ghee, the offering made from milk of A2 cows stands out for its exceptional nutritional value. A2 cow ghee is richer in nutrients like vitamin A, vitamin E, antioxidants and conjugated linoleic acid compared to regular cow ghee. It is also naturally free of the A1 protein which some people have trouble digesting. The A2 cow milk used to make this ghee has higher levels of beneficial nutrients and easier digestibility. Switching to A2 cow ghee can provide all the traditional ghee benefits like promoting strength, vitality and balanced cholesterol levels, while being a healthier choice for those looking to make conscious food decisions during festive indulgences. Its pure, chemical-free nature makes it an ideal pick for health-conscious households this Holi.

So as you indulge in the mouth-watering Holi delicacies this year, savour the goodness that desi ghee brings to each bite. Let its time-honored wholesome goodness nourish you from inside out during this festival of colours and festivity.

The crisp, flaky outer crust of the gujiya gives way to a delightfully sweet and nutty filling, made richer by the generous use of desi ghee in both the dough and stuffing.

Here is the Gujiya Recipe

- 2 cups all-purpose flour (preferably maida)

- 1/2 cup Aranya A2 Cow Ghee

- 1 cup khoya (mawa)

- 1/2 cup powdered sugar

- 1/4 cup chopped nuts (almonds, pistachios, cashews)

- 1/2 tsp cardamom powder

- Aranya A2 Cow Ghee for frying

  1. In a mixing bowl, combine the flour and A2 Cow Ghee. Rub the mixture between your palms until it resembles breadcrumbs.
  2. Gradually add water to form a smooth dough. Cover with a damp cloth and let it rest for 30 minutes.
  3. Meanwhile, prepare the filling by mixing khoya, powdered sugar, chopped nuts, and cardamom powder in a bowl.
  4. Divide the dough into small balls and roll them out into thin discs.
  5. Place a spoonful of the filling in the centre of each disc and fold it over to form a half-moon shape. Seal the edges by pressing with a fork.
  6. Heat A2 Cow Ghee in a deep pan and fry the Gujiya until golden brown and crispy.
  7. Drain excess oil and allow them to cool before serving.

Besan Laddu, another beloved sweet treat, showcases the versatility and health benefits of Desi Ghee. This delightful confection, made from roasted gram flour, ghee, and sugar, is not only a delicious indulgence but also a source of energy and nutrients. Here's a quick recipe to whip up these irresistible laddus:

Here is the Besan Laddu recipe -

- 2 cups besan (gram flour)

- 3/4 cup Aranya A2 Cow Ghee

- 1 cup powdered sugar

- 1/2 tsp cardamom powder

- Chopped nuts for garnish (optional)

  1. Heat Aranya A2 Cow Ghee in a pan and add besan. Roast the besan on low heat, stirring constantly, until it turns golden brown and aromatic.
  2. Remove from heat and let it cool slightly. Add powdered sugar and cardamom powder to the roasted besan and mix well.
  3. While the mixture is still warm, shape it into a small laddus by rolling it between your palms.
  4. Garnish with chopped nuts if desired. Allow the laddus to cool completely before serving or storing in an airtight container.
